I'll probably just use cheddar. Not ideal. Not ideal at all. Maybe manchego. Hmmm. Got a pretty new tracklements strong english mustard though which is good although since it's so hot I'll likely use too much.

Now with less breakage.

Jarlsberg is good. It's the second most selling cheese here (after the more neutral Norvegia), and a solid choice when you want some slices of cheese on your bread.

That said, most of the export Jarlsberg is apparently made in Ireland from Irish milk, and in Ohio from US milk, and I've seen rumors they don't taste exactly the same.

Manchego would probably be the better option. Always goes good with ham.
