Sabine is an artist, so who looks like what at least has an explanation (Heck Rebels itself could very well be the story as she remembers it, especially since she was the one narrating the epilogue) There's a new Lego Ghost set that includes Jacen Syndulla, who's sporting a new look as well (That at least can be slightly rationalized as Sabine colored his hair; here's hoping they at least remember that his ears are green)

tbh I think the scale is directly derived from the models. We know an X-wing is X(heh) meters long based on the size of the pilot, and when we see it next to the Star Destroyer it's Y% of its length, therefore the length of the Star Destroyer is blah blah blah and that's what goes in Incredible Cross Sections. The problem is that model makers only care (correctly, tbf) about what looks good on screen and the sourcebook writers can only start their work after the model makers are already done so it's not like they can go back and say "hey this is a little weird, any changes to be made here?" What the witers probably should have done though is say "well it looks exactly like an ISD so unless there's something in the text saying it's bigger, it's just gonna be the same size as an ISD because that's the logical assumption to make, and anyone who busts out the measuring tape next to their TV is gonna be annoyed with us for other reasons anyway." The ultimate problem maker though is JJ and whoever originally decided to sign off on the superweapons looking exactly like ISDs in the first place, because setting aside all the scale issues, holy loving poo poo that was the absolute least creative choice they could have possibly made. Everything else is directly downstream from that dumb decision

Yeah it was pretty tragically hilarious how the ffg dogfighting tabletop game just gave up on the new trilogy giving them anything to work with after ep VIII.

(In my headcanon, the penis laser is an upscaled version of the one designed for Lord Nyax). That of course only shunts the problem to the overall development of the movie.
