I prefer to have the line cook pull up the non stick matts on the floor and just drop my chicken down there on the floor that is covered with all the dropped food of the night. Then he needs to step on it and then flip it and do it again. Pound it out to make it extra tender with that shoe. I like it best next to the saute station becasue there might be some shrimp or other shellfish crushed into the ground there. Seasoned to perfection.

Tarragon is for tomatoes, if you ever have some nice home grown stuff you want to slice into big rounds, on a plate, maybe some flaky sea salt., on some bocconcini slices?

Put on some Tarragon. Pairs with tomato like pickles and dill.

If I'm cooking chicken I usually use a blend of cumin, coriander, oregano, and some dried and ground chiles.
Sprinkle some salt, pan fry or bake because you don't have a grill in your lovely apartment, then finish with some lime juice and eat it with rice and beans

Legit the best seasoning for chicken is made by Webber and it's called kickin' chicken and it alone will make the skin crispy spicy and delicious when smoking and grilling breasts or whole birds alike

Trip report. They did not have “soul food seasoning”. I bought Clover Valley seasoning salt and Tajin seasoning. I think I heard someone mention Tajin in a thread somewhere, so I bought it. It might have been a goon talking about anime or something weird that I took out of context though. Either way…It was 5 bux or so invested to spice up my chicken game.

okay so here is a recipe.

pound out your boneless chicken breasts that you have fileted with your meat mallet. (put it between folded saran wrap to save mess)
Don't mangle it

coat chicken in a mixture of flour salt and pepper

heat up a saute pan big enough to cook your chicken. use something with tall sides

Get the pan nice and hot. Use vegetable oil in bottom of pan because olive oil has a much lower smoke point.

Pan sear the outside of the chicken on both sides. Once you have flash seared it turn it down to medium and deglace with white wine and add just a little extra. Add a small amount of stock. The wine and the stock reduced will be the base for the sauce.

after it has reduced and is slightly thicker. The flour and fonden from the pan will help with this. Add in some chopped artichoke hearts and strips of roasted red peppers.

Remove chicken and place on plate.

add chopped fresh parsley.

Put enough cooked fettucine in the saute pan to feed however many people that are eating. Toss so that it is mixed.

Plate up the pasta and place the chicken over it.

Put just a small amount of shaved parmesan over it

salt and pepper to taste

Oh yah, dill, Not sure as a rub, but in a chicken dill soup with drop dumplings is v. good.

Also I'm surprised this thread has gotten to page 2 without someone saying rosemary/savory, those are extremely classic chicken seasonings. A chicken stock made without rosemary belongs in the trash.

if im doing a beer can chicken i like to use salt, pep, oregano, cumin, brown sugar, chipotle powder, and cinnamon for a rub

you gotta watch it though ive had more than one catch fire on the side, but the crispy skin with that flavoring is soooo good

and the beer makes it so moist

Edit: it is *kickin* chicken so maybe also cayenne and/or mustard powder
