I mean, if the hilt wasn't a tipoff, the fact that Saber's noble phantasm involves summoning a giant eight headed energy snake from it would certainly be. I can really only think of a single sword in Japanese history who's legend revolves around The Goddamn Orochi.

Caster tends to be the most wildly varied class because it basically can be summed up as 'This person's big thing is being Intellectual', so in addition to your classic magic users, you also have Poets, Artists, Musicians, Scientists, and Inventors counted amongst them, unless for whatever reason they also qualify for another class for whatever reason (Such as Nikola Tesla being an Archer because gently caress it, Imma shoot lightning at people). Similarly, Riders as a class also tends to include a lot of Leaders of Men type character, even if they aren't strongly associated with having a mount. For example, Queen Medb of Celtic mythology is a Rider class Servant, and the flimsy justification they give for why is that she Rides Men. And yes, In That Way.

The biggest thing preventing a Servant and Master pairing from simply going 'Arite I'm gone' and ditching a grail war is that Servants are dependent on the Holy Grail/Waxing Moon/Insert Substitute Here for Mana, since very few mages in the modern day (or even back when Mana was more plentiful) have the ability to sustain their servants just on what they can personally provide. That said, it is possible in (most) Grail Wars to withdraw, which usually involves the Master seeking asylum with whatever organization is running the war. They give up their Command Seals to the organizer, and their Servant is kept around until a new Master can contract with them, while the old Master basically sits around waiting for the war to end under the protection of the organizers... which they very much need. See, once you've been selected as a Master Candidate, even if you lose your servant in battle or give them up to drop out, there always exists the chance that a Servant without a Master might seek you out and form a new contract with you. So most opposing Masters will try to murder you dead regardless just to be on the safe side, because better to Commit Coldblooded Murder than to risk having a Servant you thought you defeated being given a life line.

And boy, do Casters (usually) need that edge, both because Casters are not all that good in a straight up fight (squishy mage syndrome) and because the three 'Knight' classes (Saber, Lancer, Archer) come with some level of Magic Resistance that allow them to no sell smaller spells and fight against heftier ones. Some Servants in particular have Magic Resistance so high they can delay or fight off the effects of a Command Spell if they really put their mind to it. Especially someone like Gilgamesh, who would probably react to a Master trying to force him to do something via Command Spell by going 'lolno' and then rendering said Master's head a fine red mist.
