Resorts are for suckers, use VRBO. As for which part of Maui to stay in, really depends on what you want to do and what time of year you're going.

We're going to be there late March and planning on doing hiking, biking, snorkeling and kayaking for outdoor recreation as well as wanting to eat at some nice places.
We kinda wanted the convenience of a hotel, but the price savings from a condo rental is probably worth it.

Ah, right on. Best bet is probably going to be westside, Lāhainā or Kā'anapali. Kind of a little bit of an extra trek from there to Haleakalā or Hāna if you're interested in visiting them, but otherwise ticks all the boxes. Tons of great beaches for snorkeling (Honolua Bay in particular is world-class) and there should be plenty of kayak rentals up there. Decent chance there'll be some good swell that time of year, too, if surfing is your thing. The West Maui Forest Reserve has some pretty good trails for hiking and I'd imagine there's some decent biking trails too. Front Street in Lāhainā has a bunch of restaurants and shops. Also just FYI you'll be there right in the heart of whale watching season.
