As a means of making up for my pathetic withdrawal from this season's N/ICSA challenge, I felt it necessary to throw down a gauntlet of my own. Get ready for the GRILL GOONS MEXICAN MICRO-CHALLENGE! It's June, which to me means it's officially summer! gently caress the solstice! Real grillas among us have been suffering through rain, sleet, and buffeting winds to grill our favorite meats and veggies, but our paradise has arrived at last. Now you can stand in your yard in ugly soot-stained cutoffs, chugging an overpriced session IPA and smelling the sweet smell of charcoal and the nearby garbage dumpster. What goes better with grilled meats and vegetables than some spice? Some tasty charred poblanos or some steak seared with chili pepper, grilled chicken with habenero salsa fresca... the possibilities are endless and delicious. So my challenge to you, fellow chicken-cheesers, is to craft a complete and delicious Mexican-inspired meal... and do all the cooking on the grill! Propane, charcoal, wood or otherwise, I want to see meats charred on flames, veggies seared on skillets, and tequila splashed onto flame-broiled shrimps. Ideally, your dish will be a main and a couple of sides, but the rules aren't hard and fast here. If you can make a spread that makes people mash that "vote" button, submit it! How hard and fast are you with the Everything Grilled rule? Because I've made some mole sauce to slow roast some pork with, and I have more that I'm saving to use in other dishes, but I definitely made it on the stovetop.
