Pitas were on sale so my goto breakfast for the past week has been putting a bit of mayo and hot sauce on the pita, then putting a bed of spinach on top of that, then some diced avocado + tomato, a bit of crumbled blue cheese. Meanwhile I've been brownin some pork sausage, scramble in a couple eggs and dump that in there, fold and eat. I guess that's more of a breakfast sandwich than putting eggs on somethin tho cause you eat it with your hands rather than a fork.

i spent some time in central mexico, driving a clapped out old bronco, just had some extra money and wanted to see what the poo poo goes on there. chickens everywhere. i love huevos rancheros, op, and they deserve a platform

Plus the pita is already at peak capacity. I guess i could dice up some onion and tomato together and just keep that in the fridge for quick topping but they lose flavor like that.

breakfast burritos kick rear end crack a bunch of eggs into a bowl with a bunch of cumin and then more cumin. whisk dice some onion and throw it into a pan with a little butter or olive oil. cook a little bit eggs in. scramble shredded cheese in at the last minute to mix in warm and melt then spatula it into some number of flour tortillas (the big burrito kind not the small taco kind) do it. just do it! make your dreams a reality
