My favorite bird is the duck Specifically, my favorite type of duck is a Moulard that has been fed enough for it's liver to grow several times it's normal size.  The liver can then be sliced, scored, seasoned, and seared to produce one of the most incredibly flavored and textured things you will ever put in your mouth.  In addition to foie gras, the Moulard produces Magret Breasts. Each duck will only produce two breasts over its entire life! These are extra fatty and flavorful breasts, a real treat.
