I love the idea of thyme — it sounds so good on paper, bundled up as part of a bouquet garni or used to flavour roast chicken. But it just tastes bad to me, and my friends think I'm nuts. Does anyone hate it too? Is there some genetic basis for this?

More detail: dried thyme has this bitterness and dried grassy scent that dominates the flavour profile of whatever I use it in. Fresh thyme tastes really medicinal, like Fernet Branca. I love other herbs like rosemary, bay, tarragon, oregano, mint, so I'm really wondering what's up with this irrational prejudice.

overall though i don't think thyme is something you Showcase, it's not a front and centre type of flavour. maybe that's the op's problem, just putting too much of it in stuff????
