Nah smoked turkey is delicious but is prone to over-smoking. The first time one of my friends smoked legs at home I was tasting smoke for three days afterward. Later attempts were great though. Also don’t smoke a whole turkey on your Weber smoker or whatever it’ll never get hot enough to fully cook all the way through.

Smoked turkey legs are good, but smoked turkey legs at ren fairs and theme parks suck. They're always dry and tough, whereas turkey smoked at home is loving juicy and delicious, assuming you have some idea of what you're doing.

I made one of my co-workers almost puke eating some delicious smoked herring. Spatchcocking is just the way to go for whole birds. A lot of supermarket poultry already have a bunch of saline packaged with them to combat the dryness Brine and mariniation really helps.
