The reason why loads of British things are called pudding is that the term used to be to do with how the thing was cooked -- you stuck it in a bag and boiled it, like a haggis or sausage, but also like how a Christmas pudding is traditionally cooked. Then the sweeter form got more popular and the usage shifted to include any sort of sweet dessert, whether you boiled it or not.

You mix blood and a few other things (fat, oats, seasonings) together into a thick paste and then fill sausage skin like normal.
