We Are. Hence the meme about what qualifies as poutine. But they hosed up the top left. Purest poutine uses chicken gravy. It was a poor person street food and originally used canned hot chicken sauce (the gravy for hot chicken sandwiches). At least according to my Quebecois mother.

Truth. The folks that are serious about it don't call it gravy. It's sauce. Source is a cheese maker pal of mine who moved to BC from Quebec. He would bring a propane fired commercial deep fryer, and his own brand of cheese curds to camping parties. He'd serve poutine to folks between DJ sets.
