i don't know what they're called, but i bought some biscuits in denmark that were big shortbread things with white chocolate chips and big sugar crystals on top. those were pretty great

i made a couple of batches of these over the holidays and they went down extremely well, they have a nice crispy outside and melt in your mouth when fresh from the oven. https://www.stuff.co.nz/life-style/food-wine/recipes/104353297/recipe-gingernut-biscuits-from-pitches-store please post more recipes so i can try them, especially if it's something i can't typically find in New Zealand or Australia
