Scott made watercooled two-strokes in the 1920s http://en.wikipedia.org/wiki/The_Scott_Motorcycle_Company Classic Bike did a write up of riding one of them - two gears and about 5 different chains flying all over the place. Crazy crazy stuff.

5/29/2009 Monthly Friday Night Ride in San Francisco. This picture was taken 5 minutes before the group took off, before several more people showed up. Click here for the full 8517x1746 image. That night one motorcyclists went to jail for no plates and doing wheelies. A cop lit him up on the bridge after he did one, then he did 2 more, weaved in and out through traffic, did two more, then made a turn and then the cop followed him. Next thing I see is him in cuffs. A custom Hayabusa V-8 in the back of an Ariel Atom. I did a trackday with the company that is prototyping this. It was a beautiful piece of machinery. Also Oregon Raceway Park is awesome, waiting to see if I get any action shots from the day. It wasn't running right the day of the trackday, the oil pressure sending unit was not working and it was having mis-firing issues. The owner says it puts about about 350 HP.

Absolutely, there's a lot more to going fast than dragging things. I'm still impressed by that video though, given the age of the bike and given the tyres are single compound pilot powers, rather than slicks or any of the multi-compound road tyres around now. I didn't realise the difference was that small, especially with Michelin saying there's a 20% increase in grip between the two. I can't find the video, but a Fifth Gear behind the scenes clip showed them pinning a remote microphone next to the exhaust to pick it up over the wind, which they then amp up during editing. Maybe you can get a similar setup.
