I think it's drivetrain lash being taken up because the gearbox gets unloaded and then loaded again when shifting. Even my old Corolla did it when driving aggressively.

Slack between the gears (in the 'box and diff) being taken up as they mesh, and then being unable to overcome the enormous grip from the tyres.

I love long complex tracks like Nurburgring, (13 miles) and the TT track is even longer at something like 37.8 miles.
