Its been posted here before, and it was widely speculated that all the nice cars were removed before the filming for security reasons. He wanted to show off the garage, but not tell everyone in the world exactly how many millions in cars he keeps down there.

They're probably letting completely off the gas, which causes oversteer because weight transfer to the front of the car. Mashing the brakes just makes it worse. Standard panic reaction for inpexperienced drivers is to release all pedals. Slightly more experienced drivers mash the brake (and possibly clutch). It takes a certain degree of confidence to keep on it and drive trough it instead of panicking. E: That dude on the motorcycle at 4:45 sure knows how to crash properly. It's more or less just the natural evolution of sticking lunch trays under the rear wheels and having the handbrake on. Seems like there's a business opportunity everywhere. E: "They should come up with a skin like that for summer tires to turn them into winter tires" from the comments. On the surface, it seems like a neat idea, sort of an evolution of snow socks, I guess? But I don't think it's safe for higher speeds nor strictly legal, unfortunately. Plus I can't imagine doing an oil change on a 70 year old tank sitting in a field is easy.
