So, I have a hugeass rib roast I've been dry aging for almost a week now. Took it out this morning, rubbed it down with salt, and had it sitting on the counter to come to room temp. Come in a bit ago, roast is gone. Ask my dad what the gently caress happened to my meat?

"Oh, it was sitting out, I didn't want it to spoil."

So he puts it in the loving garage where it is currently 5F out. :negative: partially frozen meat.

My dad redeemed himself with a great slow roasted pork rib. I used to live with a guy who meant frozen=fresh. Thanks for putting my steak in the freezer, dude.

I sent my pork rub recipe to my mom, and it turned out okay even though she had half as much rub as needed, but southerners are not crazy about spices much anyway. The real battle was me trying to Sear off the outside of each pork chop before plating it. People grew impatient, since if it's no longer pink, pork is done, right?

I'm so glad my family knows how to cook. So far, I've had smoked elk cubesteak, beef steaks, salt crusted turkey, and I'm waiting on roast beef with yorkshire pudding for dinner tonight that's gonna be loving delicious like it is every year.

Also I am going to get sick at some point eating my momma's candied pecans. They're way too goddamn good.

My in-laws decided to show up with 3 days notice before Xmas eve.

My wife said yes.

It has been the most stressful, yelling, hissing under your breath through gritted teeth, crying, stress sweat filled Christmas ever.

The best part is my ADHD- ODD twins are picking this time to go batshit.

Worst part, they won't stay the gently caress out of the kitchen and won't follow simple directions.

How the hell does someone who was a full time housewife for the past sixty loving years not pick up the most basic cooking skills? Especially when she cooked nearly every meal served to her family during that time.

It's willful ignorance or it's passive-aggressive loving with the family.

I am fairly certain a good deal of my body weight is currently delicious, delicious stuffing. Oh, and turkey, but mostly stuffing.

My sister's boyfriend, who's not her fiance solely because he's allergic to the idea of commitment despite living with her for like a year now, got a bottle of vodka and some Bloody Mary mix in his stocking thanks to my dad and I. He was quite pleased and proceeded to have a tipsy debate with me about food safety, genetically modified foods, hunting for his own venison jerky in northern Michigan, his uncle who burned out on LSD in the 70s and has a moose trophy with a nine foot antler span, and the differences between socialism, Marxism, Leninism, and Stalinism. Meanwhile my sister went :neckbeard: over our cousin's new baby, my cats went :catstare: at all the visitors, and I now have a proper roasting rack that will fit the pans I own so I can cook stuff like pork loins, roasts, and poultry without jury-rigging with foil up at school.

A Good Christmas.

I am also very glad that I managed to convince my family to branch out. Instead of the same spiral ham, green jello monstrosity, mashed potatoes and lil smokies we've had every year since I was a kid, I made ribeye, twice baked potatoes, cucumber bread and pigs in blankets. Different enough to make me happy, not so different that everyone got scared of food. One day, I will even convince them that pink does not mean raw. One day.

Not hating but our breakfast of choice is sausage or ham biscuits with mustard. Definitely a tepid reaction to mulled wine, because nutmeg is the only baking spice readily accepted. That said the farm is beautiful this time of year.

Okay, so. I invited this cook from work over for Christmas, since all my friends were gone visiting family and he'd recently broken up with his girlfriend and his family live in Wisconsin. I figured we'd make some marmalade, have some drinks, and make a Christmas out of it. Dude rolls through with 8 grams of psilocybin mushrooms. That was one hell of a holiday.

Still managed to make 6 jars of Seville orange marmalade too. A++, would Christmas again.

I read some page from the Mayo Clinic about how grapefruit and other citrus (including the Seville orange) can interfere with certain medications. Certain compounds in the fruit prevent you from metabolizing various chemicals, which leads them to hang out in your system longer and have more intense effects. So the marmalade was an auspicious choice.

I just buy a giant jug of grapefruit sections in their own juice. $10 gets me 10-12 grapefruits without all the hassle of digging at them with a serrated spoon.

The only problem is that it's so easy to eat that I usually have about 4 grapefruits for breakfast.
