My wife has a recipe for stuffed shells that's mostly ground beef and cheese (ricotta, I think). We'd like to add a little variety by exchanging some of the ground beef for Italian sausage, but neither of us are cooks, so we don't really know how much to change. We aren't into spicy foods, if that matters. Does anyone have a suggestion?

Either that or find a similar recipe on the internet with different ingredients and just follow that if you're afraid of experimenting. e: Most italian sausage will be made with pork, so it's going to taste a little different than beef. It'll be way more flavorful, however.

Or you could mix them 50/50. You can buy meatloaf mix at the grocer which is lamb pork and veal. Its the same principle plus this is shells and cheese and meat its going to be hard to gently caress up.

What I usually do in situations like this is start with half. Too spicy? Cut the sausage part in half again going 3/4 GB to 1/4 sausage. Not spicy enough? Cut the ground beef part in half. Still not spicy enough? Try adding some Chorizo (find it in the mexican section) or just use spices or hot sauce. Another thing to worry about though is the leanness of the meats. If your ground beef is really lean but your sausage is fatty then you may want to use less sausage unless you are cooking the meat separate and can drain off any extra grease first. As far as not remembering the ratio, if you are working from a cookbook or recipe card just mark on there what you used the last time. If you are not then maybe you need to get a small notebook for your kitchen that you can make notes for things like that. Put an index at the front with recipe/page number so you can quickly look at it and see if you have altered that recipe at all.

Alright, thanks for the suggestions. I thought 50/50 might be a good place to start, so we'll either do that or go with kedo's suggestion of all mild sausage, depending on what the grocery store's got.

Is there a name for the kind of scene in fiction where two characters are talking about some secret information that they don't want other people to know, while some of those other people are plainly within earshot? Stuff like two prison guards saying "Make sure the prisoner doesn't find out that we leave the keys hanging on this wall over here!" or "I hope we can use the secret back door under the tree stump rather than hiking all the way around to the front gate". (The characters want the secret kept, but for story purposes the other people need to find out the information, and this is how the writers chose to do it.) I'd settle for a link to TV Tropes.

Headphones: My GIRLFRIEND's son is 16 and he already has some couple-year-old Beats headphones. This year, for the Christmas, he's asking for some Beats by Dre over-the-ears that cost between 150 and 200 bucks. I find that utterly ridiculous but I am not an audiophile. No audiophile here but a guy at work has some smallish sealed beats, I tried them and to me they don't sound as good as my $40 sealed sennheisers. Bluetooth like you're talking about can be lovely to deal with + something else to charge though

Check out the Bose AE2 headphones. They're somewhat flexible, the cord is detachable, they're comfortable, and the sound is going to be your opinion, but I love these headphones. They're sufficient ear warmers in the winter too, at least so far. I use them for everything. They're big enough to hang around my neck and be comfortable when not in use.

If your network is set up to assign IP addresses automatically (and it probably is) you should be able to just disconnect and reconnect and it will assign a new IP and everything will be fine. If the IP addresses are set manually then you'll need to give one computer a new address.

(I swear someone just asked this question in another thread, but I can't find it) I've just bought a Mobius dashcam. It records .mov files in 180p 30fps. Each 5min chunk is 650MB in size - far too big if I want to stor a couple of journeys. I'm running Win7 and would like to be able to trim, join and export in a smaller file format. Windows Movie Maker crashes. Microsoft Expression seems to take an age and creates poor quality output (possibly due to my lack of familiarity with it) Handbrake might work, but I can't figure the exact settings to get a decent quality output. It also doesn't haev the ability to edit. help?
