Try using rice flour rather than AP for batter, it makes a lighter and crispier coating. I'd also recommend using soda water or - even better - beer for the liquid component. The carbonation will help with crispness, and the residual sugar in the beer will help the coating brown nicely while it cooks. If you're going to fry bread, you should probably do it like the Navajo and start with raw dough. That will keep the dough totally enclosed in crust so it doesn't become an oil-soaked sponge. We have a bread thread that would be a great place to start looking for a fry bun recipe.

I mean technically you can fry sliced bread, just via pan-frying not deep-frying. And now I want French toast, drat. Should bake some challah this coming week for that.

You know, I'm really glad this thread got moved to GWS since I don't think I would've ever thought about actually deep frying a burger without advice that it might actually be able to be done properly.

Going with half cornstarch and half regular flour works pretty well, too. And yes, use soda water or beer to make it real light and fluffy. And it needs more salt than you think it does and you should salt it again right out of the fryer if you really want to do it properly. Anything out of the fryer should be salted pretty much immediately. e: maybe using a hard roll or toasting the outside of the bun would help with the soggy part of it? I dunno, might be worth a shot if anybody wants to recreate this abomination. Someone should make a burger where all the things on it are deep fried. Fried tomatoes, fried pickles, fried onions, and finish the patty by tossing it in the deep fryer. Would this be more or less gross?
