Vegetarian brown rice paella with an egg on top. I grated some fresh parmesan on top before consuming. I toasted the rice before cooking, which was pretty awesome. Onions, garlic, spinach and kale, lots of tomatoes, and a poo poo-ton of basil. Quite good. Still, I may consider going meat-eating for a night to have a real paella at some point.

We were going to go out and do something tonight but we decided we were too tired. I said I didn't want to go out, so we rooted through the fridge to see what was there, and we came up with an acorn squash that we bought a week ago on a whim and had been meaning to try out. (Neither of us had made or even eaten acorn squash before.) We brainstormed a bit and looked at some ideas online, and read up on acorn squash preparation generally; then we hit the kitchen and halved and roasted the squash, which we then stuffed with a mixture of quinoa, panko, sliced almonds, and parsley, and garnished with the toasted squash seeds and served alongside kale.



Super happy with how this came out. Delicious, rich, hearty. Perfect winter meal. Also it turns out I am super into the idea of food that is its own container.

Man, I love acorn squash - I buy them whenever I see em. Such good flavour. Dice it, roast it and have it in pasta (with goats cheese & tomato) or with lentils, feta & balsamic vinegar.

I'd never eaten acorn squash before a few weeks ago, but I am super into it now. I like to just roast it with (fake) butter and garlic, salt and pepper.

I made some soft pretzels the night before last and that was my first experience cooking any type of bread. It went pretty well so I figured I'd try making some 'normal' bread tonight since I had more yeast and stuff.

This loaf is pretty standard as far as I know except for a bit of honey and half the water substituted with milk.

I'm pretty happy with the results - nice crunchy thick crust and a moist interior. I guess it split in the middle like that because I cut that line too deep - the more you know.

Here's a roast I hosed up the night prior because I forgot about it entirely and ended up putting it in the oven still cool from the fridge so it didn't cook as evenly as I'd like. Used it for practice shooting food.

Had homemade pizza night with the room mates. Blazing hot cast iron pan, throw under the broiler to cook the top in a few minutes while the pan cooks the bottom. would of liked the crust to be a bit fluffier/have more air pockets, guessing it didn't rise enough or I over kneaded?




Eggs Benedict with some cubes of crispy pancetta on top and panfries/hashbrowns. First time making a hollandaise sauce, turned out good enough I'd serve it to other people.

Braised beef, shredded and reduced the braising liquid to a sauce, very sweet/smokey, served on top of some corn bread pancakes.




Made New Years supper for a bunch of friends. Roasted some chickens, butternut squash, carrots roasted in chicken drippings, rosemary potatoes, prosciutto wrapped asparagus, and a lovely green salad.



Some big rear end burgers with caramelized onions and home made bbq sauce, on fresh cheese buns.




Good easy club sandwhich.

Lacking a photo or finesse but my last self-cooked meal was a popcorn chicken wrap. The chicken pieces were tossed in a ranch, honey, and hot sauce blend and oven cooked. Also included were white rice cooked with butter and Montreal Steak seasoning; romaine lettuce; and two types of pasta (bowtie and shell) in an alfredo sauce. I was worried the alfredo and ranch would piss on each other, but it all blended really nicely. I recommend. Will photo the next meal.

Sorry for the incredibly bad picture

We burged tonight because I had some ground beef to take care of and some buns that were due and a bunch of random poo poo to use



I ground some Sichuan peppercorns and incorporated it into my beef with salt. Added a slice of American and a slice of Cheddar. Topped further with some sriracha, chopped pickles, grilled onions, fried scallions, lettuce, tomatoes, turkey bacon. Came out VERY good.

Hers was just regular burger with onions, lettuce, k+m, turkey bacon


Side was dandelion greens sauteed with onion and garlic

It's Alton Brown's recipe here, but I don't do the backing soda/boil step because we never have baking soda in the apartment, and I seem to always make these in the middle of the night. You don't get that bagely crust/skin but I still like them, and the room mates beg me to make them every couple weeks.

Some fillet steak in our new cast iron pan with leftover potato dauphinois and a bit of salad. I had hoped to get a nicer crust but the steak was beautifully pink inside.

I used Kenji's recipe from here, except I had some leftover shakshouka in the fridge and used that as the sauce (without eggs). A handful of grated jack cheese, some cubed pancetta, lots of red pepper, and a couple eggs on top, then more black pepper when it came out of the oven. It was amazing and I have more dough left so I think tonight is beef panang pizza night.

I like it quiet in here
I meatloaf'd or as my sarcastic wife calls it, meatcake, meh whatever.

Ground beef, ground pork, italian sausage, tons of garlic, onions, bell pepper, portabella mushrooms, eggsies, breadcrumbs, worcestershire sauce, kosher salt, ground black pepper, (I totally cheated, but 2 tbs of the pesto in a tube thinger)



Well bacon of course.



Siracha, ketchup, honey, dijon mustard, and yeah I'm outing myself, a little A1 sauce right on top.
