Enjoy this write-up of a trip to the Jelly Belly factory and taste tests of various disturbingly accurate flavors.

(Also, while we had a tiny, regularly frosted white wedding cake just to do the traditional cutting thing and take some home to not eat on our anniversary, the wedding cake we actually served took the form of individual pavlovas. My cousin had a beautiful but bland cake at his wedding last month that must have been coated in fondant; it was almost, but not quite, vinyl.)

Food factory tours are pretty much always a good idea. The best I've been on was some ice cream factory in central CA (forget the brand) and they gave us fresh ice cream that had never been hard-frozen and it was a revelation.

The Blue Bell factory in Brenham (TX) does tours, and since Blue Bell is clearly the best ice cream everyone should go. Not right now though, I guess, since they're still not back on shelves yet. :(

Ube is very purple, pretty tasty, and also well established in cakes. A Filipino bakery could even make it for you.

I went to Konriko, Tony Chachere's, and McIlhenny Farms (tabasco) all in the same weekend. I was fat and happy.

Konriko (Conrad Rice Mill) has a nice short tour and a movie, then... CROCK-POTS FULL OF ALL OF THEIR YUMMY RICE PRODUCTS!!!!! White rice, brown rice, jambalaya, pilaf, dirty rice, red beans and rice, pure heaven.

Anyone ever have apple pie with cheddar? I checked it out and it seems to be a New England only thing, and they use sharp, bitter cheddar not plastic slices so there must be something to it.

There was an episode of master chef where a contestant made an apple pie with cheddar on top (not raw like your pic though). I always thought it looked pretty good but the judges seemed offended by the idea of it.

vv maybe that's why it didn't go over well on the show. He put it on and put it back in the oven so it was basically baked into the top of the crust

Being from Boston, a slice of cheddar is a staple with apple pie. The key is having good cheddar though. Most often I used to see Vermont Sharp White cheddar. Same kind that's made by Cracker Barrel.

Something about the tart of the cheese with the sweet of the pie just makes it amazing.

Edit: the cheese has to be raw. Melting the cheese on top of the pie is loving disgusting.

The guy in MC looks like he took a bag of shredded sharp cheddar and topped the pie with it before baking so the cheese was cooked to a crisp. It looks and sounds disgusting because it doesn't look like the cheese melted so much as burnt.

The cheese should be very sharp, and preferably just a little soft. If anyone wants to experiment, just try an apple slice (granny Smith or any other tart apple is a good pick here) with a little slice of good quality cheddar. It's a very tasty flavor combination. Raw cold cheddar on a pie looks like rear end, though. And yeah, melting or crisping the cheese is totally going to ruin the taste.

Take a bite, pour hot sauce on it, take another bite, repeat. It's amazing, but I'm sure it's anti-food porn to some people.

I used to work with an older guy who would eat his apples with sriracha and I thought it was weird, this is the first time I've heard of anyone else doing it. Something about fruit and heat seems off to me

It sounds more appetizing than what my grandfather does with fruit - whatever it is from apples to canteloupe to watermelon, he'll put salt on it (not just a sprinkle either, a decent amount). I don't get it.

Old people can have pretty lovely taste buds so I'd imagine that has something to do with it. I know my grandparents slather anything savory with copious amounts of black pepper

My dad does this! I thought it was a weird Pennsylvania Dutch thing, but maybe not.

My dad also used to spread peanut butter on a slice of Lebanon bologna, roll it up, and microwave it for a snack, so I don't really trust his taste buds.

Salt is basically food magic which brings out flavor, the trick is to not put a fuckload of salt on fruit and such. Just a tiny pinch between your thumb and index finger, slowly dropped across a whole slice of watermelon. It doesn't cut the sweetness any, it actually brings it way out without becoming cloying, which is loving perfect on a hot, humid summer day.

For real, if you live in the south, tomorrow go do some yardwork, go buy part of or a whole watermelon, cut some slices, salt them up and sit outside with a tall glass of lemonade. It's heaven
