Can't speak firsthand for the Legacy Edition, but I've never heard anything negative about the porting. Since it comes with MGS4 and a download voucher for MGS1, it would be the version I'd recommend.

MGS2 and MGS3 HD are fantastic ports. Didn't play much Peace Walker, so I can't tell how good that one is.

Peace Walker HD is great and improves the game by taking it off the PSP. Face button aiming is a nice solution to the lack of a second stick, but it gets annoying really quickly. If you're looking to jump right in and catch up having only played one game, the Legacy Collection is made for you. It has download codes for MGS1 and the VR Missions, the HD Collection (so 2, 3 and Peace Walker and also Metal Gear 1 and 2 as a bonus that's bundled with MGS3) and MGS4, along with the voiced comic versions of MGS1 and 2 in case those games are too dated for you to play. That's every major Metal Gear game except for MGSV, so it's a really nice package for someone to play catch up with.

So, I have my son for his summer break, which means I get to see his LP watching preferences up close. His main goto is a dude called The Diamond Minecart aka DanTDM. He's an inoffensive young British guy that mostly faffs around in sandbox games like Minecraft (and recently started fooling around in LEGO World, which honestly looked pretty fun if you like the LEGO style). He uses a facecam and makes zero effort to make it interesting, giving us a view of his staring at his screen. Meh, I suppose he could do worse. Speaking of, once a little while back he mentioned to me him watching a PewDiePie video, which I wasn't thrilled about. When I had his mother ask about him, he said he only watched him the one time because he was "for little kids". There you go, straight from the horse's mouth: PDP is too immature for 8-year-olds.
