The Schiavo case isn't a 'landmine' for Jeb!. He's legitimately proud of that and will do well mentioning it in the primary. His opponents will agree that he did the right thing - especially Rick Santorum who was right there beside him the whole time. If you vote for a Republican, that's what you're voting for.

It's a bit too nuanced of a story, I'd bet Jeb! is going to be fine in the general when asked and will probably look better now that it's been so long. Saying that you want to keep someone alive *just in case* sounds better to most people, unless they've dealt with a family member on life support and there aren't enough people in that segment to matter.
