From what I gather, they see it as if there's a sole proprietorship business entity with their name, and then there's the actual meat person with that same name (one is all caps, I forget which). They try to argue that it was the business that did the bad thing and got called by the court, not the meat person, so the meat person says "nope, technically not me" and shouldn't have to suffer any of the consequences
