This may be a little abstract, but I'm looking for songs that have a couple of qualities. The first is that the song sort of 'falls apart' or breaks down. The second is a layering of guitars or other instruments.

Here's an example that nails both:

I've worked in a lot of kitchens with a predominately Mexican staff and there is a type of music the older guys would always put on that I enjoy.

If there's anything more important than my ego around, I want it caught and shot now.
So I like metal, but so much modern metal is either the really dethcore corpse-paint screaming inaudible lyrics while pounding double-bass drums forever, or otherwise its the emo-scremo stuff like Avenged Sevenfold (which I don't necessarily hate the guitars of, but the vocals ruin it for me).

I want stuff that's harder than the old 80s metal, Iron Maiden and Metallica and stuff, but not inaudible growling like Dethcore or so emo as to turn into Pierce the Veil.
Power metal like Stratovarius or Blind Guardian are more tolerable than the emo stuff, but are still a little annoying.

My favorite band currently making music is probably Mastodon, and ironically I really love all three Dethklok / Metalocalypse albums. I want more music like that, still really hard and metal while having lyrics you can sing along to and actually understand.

Recommend me some bands that are gigging / writing music in 2015, which play awesome metal, but which aren't dethcore or emo. I need stuff right in that medium goldilocks zone, not too heavy as to be deathcore but not too far the other way as to be like most power metal vocals or most emo vocals.

I am open minded, even stuff like Nightwish (metal + operatic singing) is more appealing to me than the COOKIE MONSTER deathcore lyrics, or the Dragonforce / Dream Theater high pitched falsetto singing.

Instrumental metal would be cool too. No vocals are better than growly or emo vocals. (personal taste!)

Grand Magus started out kinda cheesy but yessss, this is exactly what I'm talking about. Sounds very Iron Maiden. I listened to that track and now I'm powering through the Hammer of the North album and this loving ROCKS. Right up my alley.

Primordial is pretty metal, reminds me a lot of really early Mastodon, like Blood Mountain era. Perfect.

Not to be That Metal Guy, but these are a lot of words that don't mean what you think they mean.

As far as actual recs, if you like Mastodon and Baroness I would look into the bands that came out of the same Atlanta/Savannah scene in the 2000s. Kylesa are probably the next biggest example. I would seriously recommend looking into anything that Baroness' John Baizley did the album art for--they all have a similar sound and are at worst kind of boring while at best super awesome.

Torche are an excellent stoner metal band with a poppy streak (they call themselves "thunder pop"). The last couple of Intronaut albums are heavy, proggy sludge but have dropped much of the harsh vocals from their earlier records.

Mega-riffy stoner metal like Wo Fat and Elder might be up your alley as well.

Finally, I recommend checking out Neurosis. They are the biggest influence on early Mastodon and their vocals are neither screamed nor sung--it's more of a bellow and pretty intelligible. They're the pioneers of atmospheric sludge or "post-metal."

I wasn't just asking for more Mastodon at all. You seem to have misunderstood me. Mastodon was just meant to be an example of a band that is still playing in 2015, making metal, and not doing horrible vocals.

Elder is pretty cool, but I wasn't asking for psychadelic prog-metal specifically. I said I wanted stuff like Mastodon, Metallica, Iron Maiden or Dethklok, among other things. Only one of those bands is remotely proggy. If I wanted psychadelic music I would have asked for that, but I didn't on purpose. Don't assume you know my own tastes better than me.

You said your favorite modern metal band is Mastodon and that you want stuff that's heavy without being too extreme, so I gave you bands that I think fit the mold. The only band I gave you that's at all proggy is Intronaut, and you never said anything about prog being ruled out. You also said "harder than Iron Maiden and Metallica," and I'm supposed to take that as meaning "like Iron Maiden and Metallica?" Take the recs or leave them, but don't be fuckin' hostile about it.

I wasn't just asking for more Mastodon at all. You seem to have misunderstood me. Mastodon was just meant to be an example of a band that is still playing in 2015, making metal, and not doing horrible vocals.

It's actually not very clear at all what you meant. It sounds like you're lumping deathcore in with all the other kinds of 'extreme metal', just because they have harsh vocals. Deathcore is a particular offshoot of metalcore quite distinct from say, death metal or black metal. Harsh vocals don't really define genres in metal, because the vocals are of secondary importance to everything else. You just don't seem to have much of a reference point for metal, look at this post for example:
