Gigi had absolutely no hand in the writing. I think she did the art for a few areas and that's it. I don't think she had anything to do with Undyne aside from her house.

She did the art for Undyne's Steam trading card. She's also credited as a "fashion consultant," which I think means that Toby asked her opinion on some ideas for character outfits.
