Shokugeki no Soma really inspires me to do more cooking so I did an 8-course Chinese dinner for my friends followed by a dessert. Hopefully I'd make Kuga-sempai proud. I really have to credit SnS for making me think of different ways to solve some culinary issues though (like how to remove bitterness from certain dishes, or upping the umami in things). Hell it took me like four test dishes of the dessert before I was satisfied. Preview:

Actually I just realized something. Since all the students in Tootsuki are below the legal drinking age in Japan, how would they handle courses on wine pairings? Or aperitifs and digestifs? They already have classes and tests based on all the other operations of a restaurant, and the use and savoring of wine would be pretty important. I know they certainly cook with the stuff at least: Souma has made at least two dishes using red wine in Tootsuki (Souma's boeuf bourguignon for Chapelle-sensei's French cooking class and the sauce for the Chaliapin steak don in his first Shokugeki). Actually this would be a great plot arc. It'd be adorable to see how each of the characters react to getting accidentally drunk. Kurokiba especially.

How is it possible to have been reading this for 150 chapters without noticing the dorm members have full blown drunken ragers where they they get hammered on Ryoko's fermented rice juice (homebrewed sake) and pass out in Marui's room on the floor? Did you just think they were falling asleep on the floor?

Did you just think they were falling asleep on the floor? I don't think it's actually homebrewed sake, they're calling it "rice juice." My guess is she's letting cooked glutinous (aka "sweet") rice sit for a while, which allows the starches to break down into their component sugars with maybe some light alcohol fermentation. I don't know about Japan, but Chinese people make something similar called "jiou niang" that is very sweet and slightly alcoholic. My guess is Ryoko's rice juice is essentially nonalcoholic than that and they just have a sweet rice-based beverage, and the joke is that they're getting roaring drunk off of what is essentially sugary rice water. P.S. Is it all right if we post gratuitous food porn of dishes foodie goons make in here in the future? ShadowCatboy fucked around with this message at 08:23 on Mar 2, 2016 |

It could be that, but IIRC there are regulations against depicting alcohol consumption (especially by minors) and tobacco use, leading to their replacement with "juice" and lollipops. edit: Tarezax fucked around with this message at 10:04 on Mar 2, 2016 |

Apparently bottled sikhye isn't even proper sikye but rather just sugared water with rice. I am utterly devastated. I do wonder what alcoholic sikye would taste like. Never thought about equating amazake with sikye, that's pretty eye-opening. I would like to try fruit-flavor makgeoli.

I wonder what the difference is that old dude is talking about. Usually it would be something like "Persona A's dish was great, but didn't highlight the taste of the salmon!", but they made it pretty clear that both dishes make great use of the salmon.

It could be how many other ingredients were used. Kurokiba turned it into basically a big old bun, a meal in one wrap, and his opponent's dish seemed simpler and more focused on the salmon, it's basically "Salmon, bacon, and a few small garnishes." I would think his opponent would win if that's the difference, since he got to the same level of deliciousness with less outside ingredients, although bacon is a hell of a cheat ingredient. Or to put it another way, a higher percentage of the opponent's dish is Salmon.
