Actual mayo is oil, eggs, and seasoning. You put it on the outside of a grilled cheese before cooking it, you get what is basically a savory french toast crunchy crust on the outside. Try it sometime. I suspect you will be surprised. The main trick, though, is placing enough mayo, but not too much, as it can leave the bread soggy.
