Got some brand new spices so it's Indian week. Generic red lentil curry thing that's like half onions garlic and butter, chana masala using what the internet claims is Punjabi garam masala, aloo jeera.

It's starting to get warm and I was feeling tropical. Well, no, really I was craving mango and pineapple salsa. Spicy, tangy honey and lime marinated pork chops, mango and pineapple salsa, and sticky adobo-spiced rice. Plating is improving.

I tried shakshuka for the first time. Girlfriend is anti-red or orange pepper due to a recent bad experience, so I went with the budget bytes recipe that omits peppers and adds cannelini beans. Served with freshly baked ciabatta. So. drat. Tasty.

Finally got my sourdough starter going properly after two failed batches. Had my first go at making sourdough English muffins with them. Dough was a bit heavy, have to tweak it for next time. Had kind of a half assed eggs benedict with them. Hollandaise with the leftover egg whites, gouda, spinach and pancetta.

Thanks guys! It's choy sum, actually. I will devour a bag of Chinese greens like nothing else. Both are Fuchsia Dunlop recipes. The choy sum is blanched in a pot of water then chopped up and spun in a salad spinner to remove excess liquid. Fry up some minced garlic and ginger, then add the choy sum and some chopped red pepper and stir fry until hot, then add some chili oil and sesame oil at the end. Really easy and tasty

Dinner party yesterday! Starter of Japanese braised pork belly (buta no kakuni) served on chinese radish 'noodles', with pickled radish, shallot, cucumber and spring onion; Main of trio of beef (braised short rib, sirloin, and marrow) served with Roaring Meg battered onion rings, petit poit, and a caramelised onion and beer sauce; Desert of strawberry cream profiteroles, in a chocolate and black pepper basket, with strawberry sauce, strawberries, and physalis. Generally enjoyable (though the baskets didnt quite work right, i'm going to have to invest in some proper chocolate moulding stuff sometime), and also actually my first time working with choux pastry. Could have presented the main better too, I think. It all went down well with our guests though, so that's what matters.

My setup for shrimp tikka masala (used to do chicken but apparently the breed of chicken I have access to is bred with a tiny heart relative to its large body and that ruined it for me). Not pictured: extra salt, 2/3 cup of heavy cream Mixin' masala (before the can of crushed tomatoes goes in) Final product (forgot to get a pic of the shrimp out of the oven)

Made some chicken wing soup on a rainy Monday in Buffalo. Onions, carrots, corn, red pepper, and some garlic sautéing in butter Added some flour to the mix then half and half and chicken stock. Made my buffalo sauce with Frank's red hot and blue cheese Adding the shredded chicken Garnished with thinly sliced extra sharp cheddar cheese and some red pepper flakes from my father-in-law's garden Money shot Somebody fucked around with this message at 15:23 on May 3, 2016 |

Stinky_Pete posted:My setup for shrimp tikka masala (used to do chicken but apparently the breed of chicken I have access to is bred with a tiny heart relative to its large body and that ruined it for me). A good tikka masala is one of my ultimate comfort foods. Looks delicious! Just a side note, since you mentioned the chicken issue, you might not be so comfortable with shrimp as an alternate choice. Shrimp coming from Thailand, especially peeled ones, are usually produced through slave labor in pretty awful conditions, the female shrimp in shrimp production facilities have one or both of their eyestalks removed to encourage them to develop mature ovaries and spawn, shrimp farming on large industrial scales is generally terrible for the environment, and trawling for warm water shrimp in the wild has a high level of bycatch, esp. wrt sea turtles. Not trying to be a big downer, just seemed like you'd want to know.

My roommates were all miserable today so I made them seriouseats Southern fried chicken. This is about half the batch after the first frying. There are no shots of the second frying because it was ripped from my hands as soon as it came out of the pan and I didn't get a chance to photo it. FRIED CHICKEN FOR BREAKFAST TOMORROW.
