On my phone (5S) I only get that screen if I start Siri and then don't say anything for about 4 seconds.

It's possible the mic isn't hearing anything, but I'm honestly not sure. Sometimes it feels nearly instant though.

Can someone recommend a Bluetooth car kit that supports that "remind me when I get into/leave my car" reminders feature? I know iOS 10 supports it now for things other than CarPlay setups, it's just confusing to find out what plug-in kits also work for it.

No there's a thing in reminders where can set it to alert you by location, and some location choices are "getting in to (or out of) my car". How it determines what your car is, I have no idea - pretty obviously it's triggered by making/breaking a BT connection, but how it figures out which (non CarPlay) BT device is your car, I dunno.

Nah, the location-gating has a setting specifically for getting in/out of your car so you can set reminders for that.

Voicemail transcription is rad as heck. Oddly, its been really hit and miss with strings of numbers being read. "Return our call at _________" but hey it makes the absolute horror of phone menu trees less nightmarish.

Is there a way to search what bands/songs are on Apple Music without actually subscribing? I've already used up my 3-month trial and a lot of the stuff I was into seemed to be missing.

Do different regions have different Apple Music selections?

Yeah different regions have different stuff. They also get stuff later than the US. I had to wait ages for a certain album. Also you'll be unable to play random songs on some albums due to worldwide outside US rights issues. It's rare enough though.

Yep, in the Music app go to search and enter whatever you're looking for and there's an option below it to search Your Library or Apple Music.

How do I get Health App to share data across multiple iPhones? I assumed it would happen automatically with iCloud but that doesn't seem to be the case. Health has a "sources" tab, with a section for "devices" that lists the name of the phone. Seems implied that I could add another device but I'm not seeing how.

You don't. Since most people will only have a single phone, Health is siloed to protect your privacy (one phone, one Health database) and avoid a whole raft of issues around throwing "medical data" around willy-nilly.

It may change in the future, but "I have multiple phones" (let alone "I have multiple phones I want my private Health data on") is such an edge case I wouldn't hold your breath.

The "Devices" tab is for your current phone (plus any data from previous phones from your backup) plus things like Apple Watch(es) and I assume other health devices that can hook into the Health app.

Ah okay. I use an older phone when I go running and just wanted to see that data on the odd occasion I actually look at my step count. No biggie, yeah health privacy is a huge deal these days so I get Apple wanting to keep that tight.

I lost all my health data when starting a fresh iPhone install from scratch because of some obnoxious bug that couldn't be fixed by a restore. Would there have been any way to transfer the health data over?
