Someone who is constantly experimenting with cooking will notice things that someone who is technically great and well trained, but never experiments will miss. It's pretty much that simple. It's not a competence issue on her part, it's just a flaw. It's not like she created some terrible attempt at Soba or something. Souma's was just better.

The problem is Kinokuni started with the wrong premise. Every argument you make is inconsequential until you're willing to use empathy on Kinokuni. And in case you had dismissed all the previous chapters as meaningless, her position is that the first flour is the best flour (and that if you perform the steps to making it perfectly, then the result will naturally be perfect). She then exerted her skills to make the absolute best traditional soba from that flour... and succeeded. It's just not as good as the (presumably) best soba made from third flour in that environment. I think that's what annoys me here, we've seen Souma butt heads with the Elite Ten and come out on top with some conditions (Hayama and Eizan weren't on top of their game, he beat Kuga in a single day) but it didn't feel conclusive, just that we could see gradual progress for Souma towards reaching the Elite Ten as a whole. Now Nene is absolutely being chumped here and this is probably the one moment in the spotlight she will get. It really cheapens and deflates the E10.

Nene may actually be among the weakest of the Elite 10. We know Erina was ranked 10th because she was the newest and it all but stated she will rise in the ranks. Eizen Ranked 9th was stated by Rindou to be better then quite a few of the current elite 10 when he puts his mind to it and focuses on it. And Nene herself stated that Isshiki was only ranked behind her because he was not trying as hard as he should. Anyway I don't think this weakens the Elite 10. Listen, I will bring up Addicted to Curry again and why this battle outcome (while it was boring for me), makes more sense. In Addicted to Curry, there was a competition, as you do, and antagonist chef served his curry to eat with a spoon, while the main character served his to eat with chopsticks. That turned out to be the deciding factor for the main character to win because the metallic taste of the spoon interfered slightly with the antagonist's curry while chopsticks didn't interfere with the taste and also it was more ~*Japanese*~. So what I'm saying is, there's literally nothing to get mad about aside from the fact that this was boring and I wanna get back to Naked Apron-senpai and eel monsters.

This entire arc is about Central making the One True Cuisine so no one ever has to improve unless they're one of the chosen ones, while the good guys want to continue battle school to push ever onward. The soba lady's entire deal is that she has trained since birth to make the perfect soba that had been handed down for generations and would never think to second guess her own abilities or creations because she's already perfect. Soma's entire character is about constant experimentation and improvement, and as a result he tried his own dish and said "oh this wasn't as punchy as I'm used to, let's kick it up a notch yeah baby" It's basically a perfect parallel to the arc.

The difference is caring about the customer really. It reminds me of the good parts of Bambino. Bambi (who is talented but very new to being a professional chef) and a fellow whose name I forgot have a quick competition to cook a risotto for everyone after work at the behest of their boss who is trying to convince the latter guy (who is extremely skilled and experienced, but in a rut) to come back and cook for him after his restaurant failed. Bambi wins, because he cooks everything a bit past al dente so it's softer and more gentle on everyone's stomach after working all day. The other guy cranks out his zillionth dish of perfect pasta made to be plopped in front of a generic customer. The owner points out that his pasta hasn't changed a bit from the moment he originally left to now.

Hubris is a common theme in Soma. Sometimes it's played for laughs and sometimes it's plot relevant. Ingredients making a difference is also old news for this manga. Hell, this felt like a slightly higher-stakes rehash of the Soma vs Part of what I like about Soma is that he reminds me a little of Gintoki: While unlike Gintoki, Soma is still learning stuff along the way (after all, Soma is around 17, while Gintoki is in his late 20's/early 30's), a lot of what they both do is just look at the situation at hand, adjust to it by recalling years of experience in their area of expertise to make awesome stuff happen. Soma has been constantly butting heads with his dad Iron-Chef-style, often trying (with less than stellar results, from the look of it) to not get his rear end kicked too badly. While the Polar Star Dorm Mother has said that Soma is the ultimate "spiteful loser" (or something like that). I do think that Soma learns to adjust at a frightening speed, meanwhile most of these guys, while no doubt incredibly talented, are still channeling that one "Good ol' 'rock'. Nuthin' beats that!" frame of mind. Now that I think about it the Soma vs. Kinokuni match had a pretty similar resolution to a Yumeiro Patissiere match where the protagonist beats an opponent (who is using impossible to obtain high class ingredients) because she notices the person she is making the food for likes really bitter stuff and adjusts her dish accordingly. Shokugeki no Soma and Yumeiro Patissiere have a lot in common now that I think about it. A lot.
