seiferguy posted:Job update: interviewed at company B today, after having offer letter from company A. Company A wants my response by tonight. I informed company B, and they said "do we still have a chance with you?" Which makes me think they still want me, but won't have a response till Monday at the earliest. Making a counter offer is a good way to extend that deadline.

I want to use some of our wedding cash to buy a good sous vide setup. Anyone got any recommendations? I don't want to break the bank, but I do have some money and don't have to go the cheap way.

An anova is like $200 and is the best around. Get whatever container and go to town. You don't need a vacuum sealer right away you can just get hi-test ziplocs and do displacement to get the air out. You don't need a blow torch like some say, just a screamin hot cast iron.

I have the Bluetooth Anova and a food saver, as well as a big, 16L rubber maid food storage container with a lid made to work with the Anova. These steaks were a perfect medium rare and like butter.

^^--that's already fancier than me, I usually just use a stock pot but I rarely do anything particularly largeSpoeank posted:An anova is like $200 and is the best around. Get whatever container and go to town. I think I've seen them down to like $120 now and then if you're cheap and want to wait for a deal. I'd kinda worry about it circulating enough to do a turkey though, although I've never even considered trying anything that big. Jesus what do you even do it in, a big rear end bucket full of water? I guess I've never thought about a whole bird of any sort, how do you deal with the skin? Throw it under the broiler for a while after it's done? I just like cooking too much to go the sous vide route. you guys at least sear the steaks real quick after they're done right

FizFashizzle posted:I just like cooking too much to go the sous vide route. Yeah. I had got steaks and other stuff on the grill down pretty well, but have been eyeing a sous vide for a while. A buddy was telling me how he does extra bbq and vac seals it pretty soon after it's done and freezes it, but reheats in sous vide and it stays super moist.

Yeah you sear just about any sort of meat after. I'm too dumb to do thick pork chops regularly without either overcooking toward the surface or having it too raw in the middle, one of my favorite things to sous-vide because of that.

I'm looking forward to making chicken breasts with it. Non organic breasts are too thick and get tough by the time they're cooked through. I can grill up some chicken thighs like a boss, but properly done breasts have been illusive.

I am not looking forward to the flight, but I am looking forward to massive family bbqs, going to Statesville to a poo poo hole BBQ shack I learned to love Carolina BBQ at, and having a low country boil or two. Also to talking to my whole family about how cam is one of the good ones.

My cat Smokey is a jet black rear end in a top hat cat who demands to go outside and chill on the patio at least once a day. Sometimes he comes back with a dead squirrel or bird or something. Tonight he came back with what may as well be a clone of him, which is weird since he's fixed. This tiny fuckin black kitten showed up with him outside my front door and i didn't have the heart to shoo her so she's on my chair sleeping. She's cute but I really can't deal with having three cats so I dunno what I'm gonna do with her.

Slow cooker-ing some pulled pork today myself. That's not going to be ready until about 5:00 or so though. Today's plan was donuts for breakfast, skip lunch, beer and bbq for supper and then a whiskey nightcap of some kind and a cigar by the fire, if possible. Just finished re-digging the fire pit on the lawn and I'm hoping to finally get some use out of it but it's damp as poo poo here today.
