There's also the fact that many common efforts to improve things for gender and ethnic minorities don't really cost them anything, while a serious attempt to address poverty would inevitably require significantly higher taxes, etc. Of course, to full address stuff like racism would also require a ton of wealth redistribution, but liberals generally aren't willing to consider that aspect of things (that is, reparations for past injustice); they're satisfied to just focus on situations where minorities currently experience bigotry or have their rights curtailed.
