They are holding the brake and throttle at the same time. That is glowing brake disks. When they stop, the pads are on fire.

In recent years Indycar changed from full alcohol to E85 (85% ethanol and 15% gasoline). NASCAR uses "E15" (15 percent ethanol). I think F1 still uses some form of gasoline.

I don't know if this is the actual reason, but there's something to be said for avoiding the risk of someone driving off while the hose is still attached (to the car, it seems to rapidly detach from the tank), which apart from the obvious fuel spillage and fire risks, tends to collect some pit crew too.

Easier to meter I bet. Overflow provides its own keystone cops situation, and underfill means your pit strategy is hosed up. Secondarily its probablly higher flow and better reliability than a pump, and getting the same flow out of a line by gravity feeding is going to need a pretty high reservoir.
