Probably since the show is shorter than the other ones, they don't want to pad it out. At 30 minutes of content, the addition of Jumbotrons would make up a quarter of the episode.

Don't forget that the video wasn't really about Stardew Valley Pro Strats, but about finding fun in a game that Justin was not having fun with. Whether he's playing it right or not is immaterial so long as he finds fun.
