We're moving back to NJ next month and I can't wait to get my Taylor ham egg & cheese with hot sauce from the deli near my wife's family's house. Oh god it's the greatest breakfast thing ever.

They're good to flip when you can tap the middle of the pancake and batter doesn't stick to your finger. Then they're done on the other side in like a minute, it won't take long. This is also a great time to add butter since it'll be nice and hot.
