Cock sauce is a good heat component because it's not super vinegary. Sambal oelek is perfect in every way when you want bright fresh chili garlic taste in your dish. I am a heat baby and so not understand the appeal of blasting your pain receptors with capcasin, because that's the only way you can feel alive.

the correct general-purpose hot sauce is Tapatio, btw Huy Fong sriracha is great for Asian and Indian inspired foods, but doesn't really work with e.g. cheese

tapatio for life also all the sauces from the pepper plant own (like the poo poo they have at pluto's). they're thicker like a sambal and not just spicy.
