Didn't Ultimate Nick Fury originally show up in one of the early issues of Ultimate X-Men prior to Ultimates? And he was more of a conventional James Bond magic tuxedo superspy deal who had a past with Ultimate Wolverine.

Yeah, he's also in Ultimate Team-Up too I think, which wasn't in continuity with the rest of the Ultimate universe except for when it was (the first issue has the Fantastic Four, but it's very clearly the 616 F4)

He has hair in both stories and wears a white suit in UXM.

Which doesn't preclude him from being a sax player, but it wasn't his main gig, so to speak. EDIT: ah hah! Apparently it was revealed in Warlock and the Infinity Watch issues 12 and 13 that he was a skilled sax player; it just wasn't his profession.
