mushroom wine update: secondary fermentation appears to be complete, racked it to a new gallon jug and now i have to leave it for a month to settle out the remaining sediment and age

i took the opportunity to test the abv: it's 17% lol. i was aiming for 12.5%

i'm just going to make weird wines and then drink them i think. wine making seems super easy so far, except for that you have to wait for months to see if they actually taste at all good or if you wasted your time

yeah probably, you can make tea with magic mushrooms so i guess hot water doesn't affect their potency and i can't think of anything else in the fermentation process that would cause problems. yeast just eats sugar, sulfites kill bacteria and fungi but i don't think they'd harm the active compounds, and otherwise you're meant to store the wine in a dark, cool place and protect it from oxidizing anyway

it's mushroom season so try it and let us know how it goes?

You can ferment pretty much anything so it's not surprising imo.

I would imagine mushroom wine tastes earthy and meaty. I've never tried it though.

i bought some mushroom absinthe when i was in north korea because they are apparently real big into mushrooms

it was without a doubt the most vile thing i've ever tried and i've seen people drink a shot and throw up immediately. what i'm saying is maybe proceed with caution here

yeah i can't promise this wine is going to be good or even drinkable but this is basically the recipe i used: http://www.happyhomestead.co.uk/mushroomwine.html

rather than marmite i used 1 tsp yeast nutrient and you can also replace the cup of tea with grape tannins. i also added potassium metabisulfite so that it doesn't grow weird poo poo in there. transferred from the primary fermentation vessel to secondary at specific gravity 1.010 (6 days for me), then racked when the wine was dry (only took another five days). i added sugar for an original gravity of 1.090 but i guess i hosed up or mushrooms contain more sugar than i thought because at racking the hydrometer just sank (meaning SG <0.990) and according to the vinometer the ABV is sitting at 17%

looks like it's going to be about 5l. i'm happy to send you a bottle when it's done but this is my first time making wine and i live in norway so i the shipping is probably going to be a lot for what might end up being a pretty terrible drink... actually this is probably a perfect yosmas present nowi think about it

i feel like if i'm sending stuff out it should probably at least be like cloudberry wine or whale vodka or something else with ingredients you can't easily get elsewhere, not cooking mushrooms that are probably grown in poland
