Also I'm not a huge mushroom fan so maybe that has something to do with it. I'd be interested to have it out at a restaurant to see how it compares. While yours looks great I absolutely agree that for me it's not really worth it. I'd almost rather do a deconstructed welly where it's a roast with a pastry element separately and an earthy mushroom/shallot/etc infused jus or something.

Yeah, Wellington is one of those things that I see as more of a thing to order out. It's a dish for cooks to show off more than a home cooking staple. Looks good, sterster!

Entropic posted:omg that sounds delicious. How did you cook the paneer, is it basically just grilled? Yeah, just a simple marinate with soy, lemon, salt and pepper, sugar, garlic, ginger and chilli, then hit the paneer on the grill. Top with sauce, peanuts, spring onions, chilli, and keep plenty of the sauce to dip. I think next time I might make the marinade punchier, and possibly run towards quick-frying the topping and going for hotter chillis (birds eye or scotch bonnet seem ideal) to get a bit of fire into the mix. Maybe a little something pickled as a palate cleanser. On the whole though, it works really well and it's something that could as easily be a starter or main course. Edit : onto tea tonight. Tea tonight is a oyster, shiitake, and morel mushroom risotto with parsley and tarragon. Rich, tasty, and savoury with a big aniseed flavour as well. Really, really happy with this. I do need to get my good ceramic wear out of storage for presentation though soon. Olpainless fucked around with this message at 23:16 on Jan 22, 2019 |

As a non mushroom liker I tend to do a shallot paste instead, works pretty well!

We're all waiting to hear about the Goldblum egg here. ... while we're waiting, this was my tea last night. Panko breaded king oyster mushroom burger, seasoned with dill and tarragon; with cauliflower hash brown, rocket, shallot and mayo. King oyster mushrooms are pretty much one of my favourite ingredients of all time, so always a treat to have some. Unfortunately, they're difficult as all hell to get hold of again, and it seems impossible to get them whole without buying trade-amount of, which is annoying. Was pretty nice, though I think it would have really benefitted from a proper pepper jack cheese for a bit of extra bite, and a bit of dill and dijon mustard in the mayonnaise (unfortunately, it's not really the season for fresh dill so it wouldn't have been great using dried). Was still pretty tasty though, and helped use up some ingredients as well, so can't complaim.

kumba posted:i got a raclette grill for christmas and finally got to use it! holy poo poo that looks amazing anyway so I recently saw a video on youtube that grabbed my attention for what it was making. It was something that looked so heinous that it couldn't have possibly tasted good. However, the person who made this sandwich said it was actually delicious. I didn't believe her, but the potato egg salad in the sandwich looked good and I wanted to make it. But then I realized "well I do have all the other ingredients and I always tell people to try something before they say it's gross". Curiosity got the better of me and I decided that I too will make this disasterpiece. Ladies and goons, I give you the Inkigayo Sandwich. Basically, a triple-decker sandwich with one layer having a simple potato egg salad with imitation crab (what actually looked interesting and I wanted to make), the second layer being strawberry jam, and the third layer being a simple cabbage slaw. I'm going to spoiler my attempt at making this... thing because I don't want to ruin the appetite of anyone who comes here to look at, you know, beef wellington and that incredible raclette above this post. I'm not posting this to be food porn, oh no. I'm posting this because I made it, I ate it, and I'm sharing it. But you're clicking it at your own risk. Let it be known that it has a grotesque but satisfying cross-section. Let it also be known that it actually does not suck. The flavors actually balance in the strangest of ways, and I'm not remotely kidding. There's too much bread though, in my opinion. I probably am never going to make it again though. The potato egg salad, which was what I had intended to make for sandwiches on its own for quick and easy meals, was good and that's all I really wanted-- I'll happily keep eating it and even make more sometime. I'm not one to shy away from weird food, but while this actually tasted pretty good, I still could not erase the strange pangs of shame that I was eating a three-layer sandwich with potato egg salad with imitation crab, strawberry jam, and coleslaw. That's the kind of poo poo that you come up with when you're piss drunk at 4:30 in the morning and want to eat but also don't give a gently caress, not when you're coming home from work and wanting some drat egg salad. Still. Behold.

It's a grill on top with little nonstick pans under a low heat broiler below it, so you grill the meats and veg on top and melt the cheese / toast the bread below It's very much like fondue in that it's meant to be a group thing that takes a good amount of time while you drink several bottles of wine

Thanks to y'all for posting about the Budget Bytes Dragon Noodles a few pages ago, I had never heard of it or the website before. Made that and it was great, made their cajun chicken pasta tonight. That Dragon Noodles recipe is so my jam. Today's version swapped the egg noodles for thai rice noodles, swapped pork for beef to get the fat content down, and added a can of water chestnuts I found in the pantry. You guys are a great influence, I absentmindedly poured fish sauce into the taco filling I was making for lunches for next week. Works.

Liquid Communism posted:That Dragon Noodles recipe is so my jam. I pretty much use fish sauce instead of salt every time I have to brown or carmelize onions. It's enough salt to get them releasing more water and the flavor pairs well with what you're trying to get out of carmelizing them. It also kind of acts as an intermediate deglazing step if you're running your pan a little too hot.

Last night we did pork chops and baked potatoes. It's not, like, fancy, but I was really happy with how the pan sauce (wine + honey + mustard + butter) turned out. Also we put ranch powder in the sour cream for the potatoes and regret nothing.

Red glazed pork Couldn't find a decent looking belly yesterday so I made the braising liquid for red braised pork and glazed a nice fatty pork loin with it instead. Side of lazily dry fried green beans.

Maybe okonomiyaki is more appetizing to look at than the Inkigayo sandwich. Osaka-style with fresh porkbelly. My first attempt at making it. It tasted great, at least.

Last night we made Chrissy Teigan's "wonton" soup which uses cut up wonton wrappers as noodles and the meat that would normally go in the wontons just in the broth. Shrimp & pork meatballs, mushrooms, broth, scallions, jalapenos, cilantro, and fish sauce. It was amazing, will definitely be making this constantly
