I discovered some vacuumed (or whatever: when the packaging is sealed so tight you can see the beans inside?) single source Maui coffee in my freezer stamped "best by 2013". We didn't even move here until 2014?

yeah it’s been frozen, so you have a baseline quality hit from that, but it doesn’t age or otherwise decay per se in the freezer

I always understood that the moisture was what hosed up coffee in the freezer.

yeah, moisture, oxygen, and time are what gently caress roasted coffee. being vac-packed and stored in a freezer (assuming it’s properly cold and not hovering around 0C) i wouldn’t be surprised if it’s still decent. made a serious error and ran out of beans myself this morning. having a strong cup of chai instead. i should try adding cardamom to coffee sometime...
