The problem is we're never going to hear all the evidence the jury heard, so most people can only go off the public reporting, which amounts to "it happened in the span of five minutes with other people not far away". Pell has been a prominent public figure for decades, and people feel like they "know" him because of it, while the victim is remaining anonymous. I absolutely think he did it (and covered up a bunch of poo poo that he'll never be charged with) but I wouldn't be surprised if a higher percentage of people harboured doubt than you'd expect, largely because of the combination of the above.
