Verisimilidude posted:cooked at a rich friend's house this past weekend and I'm in love with their tramontina pro pans. They're so good, way better than the restaurant pans I used to use, and significantly better than the cuisinarts/dollar store non-sticks that I have currently. I was just looking at them online. My Tfal teflon pan poo poo the bed and I was debating whether to get another teflon pan. I was leaning toward one of those Techef square omelette pans from Japan.

Heads up! Thermoworks has a new Thermapen with IR capability. https://www.thermoworks.com/Thermapen-IR It’s $139, it doesn’t have a backlit screen, and it isn’t waterproof. Also it only comes in one color right now. Other than that it looks good I guess. Doesn't IR only detect the heat of surfaces? So it might be cool to see how hot your baking steel gets, but it's not gonna do poo poo to tell you if your chicken's done roasting. The home applications for IR are more like "might be cool" than genuinely useful, and you can get an IR gun on Amazon for like $15-20, which imo is about appropriate for "might be cool"

I have one and sometimes I play around with it, but I can't think of applications that are really useful. What do you use it for? The only thing I can think of is checking the temp of churning ice cream to see if it's ready to move to the freezer. Mostly checking pan temps if you’re the kind of cook who needs numbers instead of waving your hand over a pan (me) Also if you’re lazy and don’t want to wash a pokey thermometer you can stir your soup really hard and laser temp it. Not totally accurate but ballpark is close enough Also if you’re heating a copper poker to plunge into a cocktail it’s good to know if it’s over 1000°. 1400° is he autoignition temp and I can’t achieve that at home but if I can at least get it above 1000° I can aerosolize the alcohol enough that a match will set it on fire.

That latest thermoworks seems a bit silly. I use IR guns to check my large griddle, and also have one to make sure my kids’ bath water is good. It especially works well for black bodies like my griddle that spans half my burners.

Do I need something with a higher temperature range if I’m using it on a pizza stone on a charcoal grill?

I'm moving to the US in a few weeks and will need new appliances. I currently have a Bamix and a Kenwood MultiPro FP920 and I love them both, but they are both getting left behind due to the power difference. I already know I want a Vitamix. Is there a stick blender that won't make me miss my Bamix? SymmetryrtemmyS suggested Magimix for food processors so I'm checking those out.

Someone mentioning your name once is not the same as ridicule, nor did you have to deal with it If you've looked at the details and all the specs are the same, I suspect the one with the -AMZ suffix is just packaged particularly for Amazon or something. For a difference of four cents ($0.04), I would just get the more popular one

Yeah lots of times there will be identical products but with different model numbers because of where they're sold. The amazon one likely doesn't have colorful packaging or something since it's not destined for a shelf display. Also, some big box retailers insist on special model numbers just for their stores so they don't have to price match even if that's a service they offer.
