I BELIEVE IN STUPID CONSPIRACY THEORIES
Tried a new recipe for red beans and sausage.

Have a new favorite recipe for red beans and sausage.

Notes:
  • Cook Time: ~90 minutes (used canned beans)
  • Fills a 2 quart saucepan

Ingredients:
  • 1 cup of chopped onions
  • 1/2 cup of chopped bell peppers
  • 1/2 cup of chopped celery
  • 2 teaspoon of minced garlic
  • 1/2 tablespoon of butter
  • 1/2 pound of diced ham
  • 1/2 pound of diced kielbasa
  • 1/2 pound of red beans
  • 3/4 teaspoon of cayenne pepper
  • 3/4 teaspoon of oregano
  • 3/4 teaspoon of thyme
  • 2 bay leaves
  • one pinch of black pepper
Recipe:
  • Add butter, onion, peppers, celery, garlic and ham.
  • Saute until vegetables are soft.
  • Add beans, all spices and, if needed, just enough water to cover beans.
  • Simmer until beans are soft and breaking up (may take a while).
  • Add kielbasa.
  • Simmer until beans change color and become thick and creamy.

Having just eaten, I feel like I need to shout this from the rooftops.

Looks like a good / standard Cajun red beans and rice recipe. I cooked this last weekend. Love it.

Yeah when I get the chance I'm gonna pick up some pork from the nice butcher, see if it's pork in general or a supply thing. I'm hoping for the latter because I really like pork a lot, but that smell, that taste... It's really disappointing. And no amount of seared crust or dry rub or sauce seems to be enough to cover it.

I attempted making Nashville Hot Chicken, super pumped with how it came out. The batter was perfectly crispy and had great flavor for only brineing for a half hour. I think I added slightly too much brown sugar to the hot oil mixture as it had some heat but was noticeably a bit sweet. Overall, would make again.

Made some beer sourdough two days ago and toasted some slices today.

Made some gravlax (gin, blueberry, cilantro, sugar, salt) last week.

Combined it today on cream cheese, tomato, red onion, capers, hard boiled egg, and dill.

Had this turkey carcass so tried making a ramen for the first time. Shoyu tare with a lot of lemon juice, and some laoganma. I had some pickled jiangdou so used those too, why not.



I swear there's a lot of noodles under there.

It was... fine for a first attempt. Not great. The broth is kind of weak, and I've never tasted tare on its own so I'm not really sure what I'm aiming for. I will attempt to befriend a ramen chef next time I'm in Japan.

It was taco Tuesday and I was out of small tortillas. I need the large ones for enchiladas tomorrow.

The quick dough was not my best. It's best described as Subway like.

Gorgeous, note to self for next time making gravlax...add the hard boiled egg! (I always forget, probably due to the anticipation of having gravlax)

Some people love them on there. Others don’t, so I just put them on like half.

Rest of the ingredients are romaine lettuce, prosciutto, cubed hard provolone, tomatoes, sliced pickled peppers, sliced sweet gherkins, black and green olives.
