Used to eat here from time to time until it shut down 3 or 4 years ago:



The menu board showed the actual sizes (and shapes) of their burger options:



Those are not pizzas on the left. It was a very rudimentary burger with only the most standard of options (LTOP, jalapeños, mayo, mustard, American cheese), but they had a really, really high-quality beef patty. For the human-sized burgers anyway, I never had one of their huge ones.




None of these photos are mine. I haven't thought about this place in years, but we had family in town for Christmas, and someone asked if we could eat lunch there. Sad trombone.

I can’t say enough about the ‘before and after’ shot. In fact, maybe we could make it probate-able to not include before and after shots. I’m also a fan of the perfect 90 degree side view of all the components, rather than the all too common ‘aerial view of a bread roll’. Anyway this looks tip top.

If you haven't yet, check out Hit the Spot! I believe they are relocating right now, but will be back up in a week or so. They were at 46th and Sandy, and I believe their new spot will be somewhere nearby.

If it's melty, then slice. If it's not a great melter then I go sort of shreddy/wide slivers.

Whatever you have at the time?

Generally I just always have shredded colby jack in the fridge so guess what usually ends up on a burg

(colby jack owns)

The *best* way imo, if it's not a cheese that melts well on its own, is to use sodium citrate and make melty slices that way. Pretty much a matter of taking a little liquid (water, beer, milk), dissolving some sodium citrate in it over a simmer, then adding your cheese until it melts and is smooth, them pour that on a silpat or parchment and chill. Cut into slices and apply to burger.
