Maybe he has super high end nonsticks that can take the damage. But the target audience for his shows are lazy american home cooks and it's not a good thing to demonstrate.

Love my 8" Tramontina nonstick. Makes perfect over easy eggs. The stainless one is really good too. The all clad equivalent is like $80.

My preference is watching trained chefs like Pepin, Ramsay, John Mitzewich, and Michael Smith. I've learned more from Smith than all other chef's combined because he focuses on technique, not recipes (you can find his show on Prime). I like Gordon Ramsay because he focuses on simple dishes well prepared, and letting the food shine through. Chef John at Food Wishes dot com for recipes, and a little bit of technique. Good Eats was fun to watch back in the day but it's impractical for my needs. If you want/need to know the food science then GE is great for that but it doesn't IMO teach practical skills.

For beginner stuff, you can’t go wrong with Simply Sara. Her recipes are fairly straightforward, and she tells you where you can sub out or leave out a particular ingredient. https://www.youtube.com/user/junklovers Her quantities are huge though, so best to watch through to the end and scale down as needed.

I like the bon appetit videos a lot but it kind of delves too close to the manufactured 'reality' tv when they do the group projects like pizza or thanksgiving. Also as a pastry chef, shouldn't Claire be at least familiar with candy making; or at least familiar with tempering chocolate?
