They've been partnered on most Big Fat Quiz of the Years and most of the time it's fantastic, but I don't really like the idea of their pairing for GBBO. They'd just be too... cynical? Dismissive? GBBO's meant to be heartwarming.

I'm sad Sandi's going. Her and Noel had way better chemistry than I expected, and while they had no hope of ever being Mel and Sue, they were good together.

Maybe he has super high end nonsticks that can take the damage. But the target audience for his shows are lazy american home cooks and it's not a good thing to demonstrate.

He probably just replaces them over time with another cheap pan. https://www.seriouseats.com/2017/02/why-cheap-nonstick-skillets-are-best.html

Love my 8" Tramontina nonstick. Makes perfect over easy eggs. The stainless one is really good too. The all clad equivalent is like $80.

Ok so I grew up in the 80s and 90s and Julia Child and Jacques Pépin taught me most of my basics on how to cook.

I still watch Pepin videos and learn stuff. My preference is watching trained chefs like Pepin, Ramsay, John Mitzewich, and Michael Smith. I've learned more from Smith than all other chef's combined because he focuses on technique, not recipes (you can find his show on Prime). I like Gordon Ramsay because he focuses on simple dishes well prepared, and letting the food shine through. Chef John at Food Wishes dot com for recipes, and a little bit of technique. Good Eats was fun to watch back in the day but it's impractical for my needs. If you want/need to know the food science then GE is great for that but it doesn't IMO teach practical skills.

Yip Yip, bitch.
For beginner stuff, you can’t go wrong with Simply Sara. Her recipes are fairly straightforward, and she tells you where you can sub out or leave out a particular ingredient.

Her quantities are huge though, so best to watch through to the end and scale down as needed.

It's usually $30. $30 for a pan I use every other day for like 2 years is cheap. Even the Tfal that used to be recommended usually went for $25?

My partner is a professional confectioner and she can't watch any of the candy-based Gourmet Makes episodes anymore. Claire and/or the production team do so many dumb things (i.e. coming up with weird, bad, complicated solutions to issues that are well understood if you know how to make candy or are easily solved by doing some Google searches) that she can only assume that they do it on purpose for the drama. They've evolved into frustration-based torture porn from the original starting point of "make a better mass-market thing".

Claire avoids researching as much as possible prior, to deliberately make it hard and entertaining. I thought Claire only researched when she had absolutely no idea how to move forward or was failing super hard? Granted I don't watch every episode. Watching her google and replicate what people already do would be way more boring. I'm glad she doesn't do this...

She can research all she wants, it's not going to help her replicate the tens of millions or more dollars of research and machinery that go into making this stuff.

Which makes her occasionally stumbling on the "correct" methods all the more entertaining.

I hate how many things I want to see from the BA crew have come down to "I bet this would be a fun way to see them hang out."

Like, I used to really want to see them take on the Sortedfood Pass It On relay challenge style thing - you have a theme, everyone has 10 minutes at a time to cook a dish together, but you don't know what the person before you did or the person after you will do. It wasn't until days after I got excited about this that I realized it would be way less interesting, because the BA crew are all at least good at cooking, if not great - I just wanted to watch them hang out tangentially foodish more.

I like the bon appetit videos a lot but it kind of delves too close to the manufactured 'reality' tv when they do the group projects like pizza or thanksgiving. Also as a pastry chef, shouldn't Claire be at least familiar with candy making; or at least familiar with tempering chocolate?

Yeah, like the bird.
She's familiar with tempering chocolate, that doesn't mean she enjoys it lol.

But yeah they do put in that 'research' segment every time when she probably doesn't really need it every time.
