The green and yellow layered desserts use mung beans for the yellow layer, and I'm not sure if I'm crazy but I swear there's a slight banana flavor to those desserts. Another thing is that some desserts have a filling made of mashed mung beans, sugar, fat, and coconut. Those yellow or green translucent cubes in the first picture (Banh Phu The) as well as the Vietnamese version of fried sesame balls and tang yuan will use this kind of filling. It's kind of like the filling in Cocktail buns you see in HK bakeries, though not quite as sweet or fatty.
