Been making some ridiculous stuff lately as a coping mechanism. There are no diets in a pandemic! I've been pretty good about using stuff we already have though. Gumbo Poutine (Oaxaca instead of curds): Have a full quart of smoked beef fat? Smoked Beef Fat Flour Tortillas, with Hoisin Garlic Sirloin Flap, Black Garlic Napa Slaw, Asian Chimichurri and Ginger-Pickled Fresnos: The chimichurri was cilantro, green onion, garlic, fresno, Chinese black vinegar, lime juice, canola oil, salt, and a tiny touch of toasted sesame oil. Holy poo poo I’ve been manually uploading to imgur and copying the bbcode and you’ve been able to do it from within the app this whole time?! e: content. I made some pot pies for the first time since we had leftover puff pastry dough and some nice mushrooms I wanted to use up. Turned out really tasty. Yesterday I made Chris Morocco's maple glazed tofu for lunch and liked it enough to try to make a dinner around it. So tonight I made a batch of tortillas and did some tofu and kimchi tacos with kale and a little gochujang spread. I also got a little sampler of Queen Majesty hot sauces and decided that since this was already a pretty ginger-heavy glaze I didn't have much to lose by just slopping more ginger sauce on. Not anything approaching authentic but look I'm working with what I have.
