The key for me in transitioning to a more meatless diet was to not eat meat substitutes or expect anything to be fundamentally like meat, you gotta enjoy the plant matter on it's own merits.

I dont think I'll ever completely give up meat but I've gone mostly meatless for breakfasts (either a bagel and fruit or eggs and toast) and only typically have meat at lunch if it's dinner leftovers. We did boca burgers with potato and veggie hash last night and it was really good.
