If you don't know, then that's Ricky Jay, and he's good. (Was good - he died in 2018.) There are some excellent YouTube videos featuring him - Ricky Jay and his 52 Assistants is a great place to start, but there's a Ricky Jay Plays Poker which is pretty amazing.

I don't remember the documentary, but some film executive or producer was chaperoning him around, and he was cranky that day. So she ends up taking him to a diner somewhere to have some coffee. They're talking and he's venting about the film, and then he lays down a napkin, makes a little curtain, and one second later there is a 1 cubic ft block of solid ice on the table. She started crying, she was so moved by this weird private trick that was just for her. He was kind of taken aback, said, "It's just lying Carol. I do it for a living."

John C Reilly told a story about being on the set of a movie that Ricky was either consulting on or acting in. Reilly's role had him learning tricks, and he learned some card trick and immediately ran up to Ricky to show him. Ricky said words to the effect of "Already? I practice my tricks for at least a year before I show anyone" Absolute boss. Had a good turn on X-Files as well.
